Vegan Cream Puffs

Couldn't find that perfect vegan cream puff recipe,
well look no further! This recipe is the closest you find to the real French pastry. It's so yummy!
Vegan French Cream Puffs
Ingredients:
2 cups water 1 oz coconut oil 1 tsp vanilla extract 1/2 cup sugar 1 tsp sea salt 2 cups All purpose flour (plus 1/2 cup All purpose flour ) 1 tsp baking soda 1/2 tbsp baking powder 1 cup almond milk Directions:
1. In a medium pot, boil the water, salt, and sugar.
2. Add the 2 cups of flour and on medium- low heat cook for a minute, stirring constantly.
3. Then add the mixture in to a mixing bowl with paddle attachment. Mix on speed 2 (low-medium speed), until steam is gone.
4. Alternate the rest of the dry ingredients (1/2 cup flour, baking soda, and baking powder) with the milk and vanilla.
5. On a parchment lined baking pan pipe a rosettes or scoop rounds of choice. Bake at 350F, for 25-35 minutes or until golden brown. Cool.
6. Cut cream puffs in 2 and take the filling out of the puff.
7. Smear the inside with melted dark chocolate (trader Joe's vegan chocolate chips). Make your coconut whip cream (see recipe below).
Add some fresh fruit like strawberries and finish glazing the tops with more chocolate or dust with powder sugar! Enjoy!
"Whip cream"
1 can 14 oz coconut milk or cream , chill
1/4-1/2 cup powder sugar (sweetness is your choice)
2 tsp vanilla extract
Directions:
1. Whip it up in mixer machine with a whisk attachment, until stiff peaks form.
