Tofu for Cheesecake? What!

Tofu is basically a soybean curd. It is cultivated by coagulating soy milk and then pressing the resulting curds into soft white blocks. You can get it soft, firm, or extra firm.
It makes a great substitute for making cheesecake. It creates the perfect texture and resemblance of that favorite dessert you grew up to love so much.
It's a great base for making a low fat vegan cheese sauces, "eggs", meatless meats, ricotta cheese, "bacon", and much more.
Before I was vegan, I did not like tofu. Well, I never had it prepared correctly. But after being vegan now for a year, I figured out how to use it. It's so versatile. You can include it in about anything, really!
Throughout this blog, you will find recipes that will have tofu in it and you would never know by tasting it.
You probably could fool all you meat eater friends. When prepared properly, you can fool anyone!
