The Best Vegan Omelette - Fluffy like real eggs!

I've tried many types of vegan omelettes. But they were all missing something that was like the typically fluffy textured eggs, I once knew.

So I have decided to try to replicate not just the flavor of eggs but the texture of a real egg omelette. So here it is! Nice and fluffy textured the same as a real egg! If you miss omelettes like I

did. Then you must try this recipe out! You won't be disappointed!

Fluffy Vegan Omelette

Ingredients

1 block tofu (14 oz)

4 tbsp unsweetened coconut milk

1 tbsp nutritional yeast

1/4 tsp chipotle seasoning

1/4 tsp smoked paprika seasoning

1/4 tsp powder turmeric

1/2 tsp onion powder

1/2 tsp granulated garlic

1 tbsp cornstarch 1/4 tsp black salt (Kala namak)(it helps make that "egg" flavor)

Sea Salt to taste

Directions:

1. Cut the block of tofu in half. Coarsely crumble one half of the tofu in a bowl. Until it looks like scrambled eggs. Set aside.

2. Take the other half of the tofu put in a blender with the remaining ingredients. (except the sea salt)

Pulse the tofu until its like a wet thick paste. Do not over mix or do not mix until smooth.

Add the mixture from the blender to the other half of the crumbled tofu. Add Sea salt to taste.

3. Preheat a greased or ceramic pan on medium heat. (Make sure your pan is already hot before you add the mixture) Scoop the tofu mixture in to your pan and take the back of your spoon and spread it out in to a circle that is about 1/2" to 1/4" thick. Let the tofu mixture dry out before you add you veggies. This should take about 10-15 minutes.

4. Once the tofu mixture looks like it's dried out on top, add your veggies to one side of your omelette. Then flip one side over the top of the veggies. Continue to cook for a minute or 2.

5. Then take your spatula and take the omelette off your pan and top it with salsa, vegan sour cream, or vegan cheese. Whatever you prefer!

You now have a healthy vegan omelette that taste and feel like the real thing!
