Vegan Donuts

Before I was vegan, I would order 1 dozen of assorted donuts for my birthday, as my birthday cake! I would spread it out over a week period. Or my husband would help eat them. But when I want some donuts I make these little guys! They are so soft and buttery!
Vegan Donuts
Ingredients
1 cup non dairy milk (warm) ( I use 1 can coconut milk)
1 1/2 tbsp dry active yeast
1/2 cup vegan butter or canola oil
1/2 cup raw sugar
1 tsp sea salt
1 lb. bread flour
1/2 cup cake flour
Directions:
1. In a mixing bowl, add your warm non dairy milk and yeast. Mix until dissolved.
2. Add sugar, the butter, and a 1 cup of flour. Then add your salt. Mix with a whisk until well blended.
3. Add the rest of your flour and mix with a spatula until it forms in to a ball of dough.
4. If you find the dough too sticky add a little more flour. Or if its too dry add a little more milk.
5. Lightly dust your table with flour and take your dough and start kneading it for about 2-3 minutes.
6. Spray a bowl with coconut oil and place your dough in it. Cover it with a piece of plastic wrap. Let it rise for about an hour or until it doubles in size. Preheat your oven to 375F.
7. Again, lightly dust your table again with flour. Take your dough out and place it on your bench. Lightly cover your dough with a piece of plastic wrap (prevents it from forming a skin on your dough). Scale out your dough to 4 oz and roll in to small rounds. (For donut holes just scale to 1 oz)
8. Place your thumb in to the middle of the roll until it punches through the center. Gently open up the hole until it looks like a donut. Place them side down on your parchment covered sheet pan. Cover with a clean kitchen trash bag or plastic wrap. Let it proof (let it rest again for 20-30 minutes or until it doubles in size).
9. Bake at 375F, for 15-20 minutes or until golden brown. Brush melted vegan butter on top and toss in to cinnamon sugar or glaze it.
