Nothing like a simple white cake for your next party! It's a great cake that you can add different fun fillings like fruit, chocolate, vegan custards, and much more!
It's so simple and delicious!
Vegan White Cake
Ingredients
2 1/4 cup cake flour
2 cup non dairy milk (I use coconut milk)
4 each egg substitute (Bob's egg substitute)
2 tbsp apple cider vinegar
2 tsp almond extract
1 tsp vanilla extract
1 3/4 cup raw cane sugar
4 tsp baking powder
1 tsp sea salt
1 1/2 stick (6 oz) vegan butter or coconut butter, melted
Directions:
1. Preheat oven to 350F, grease 2 - 8" cake pans or you can use cupcakes instead.
2. In a mixing bowl, mix together the non dairy milk, vinegar, and flavorings with your egg substitute (make you 4 eggs in advance, according to the instructions on the package)
3. In another bowl, mix together cake flour, sugar, baking powder, and salt. Add the butter to the mix until fully blended on low speed for 1-2 minutes.
4. Add all but 1/2 cup of milk mixture to flour mixture and beat at medium speed for 1 1/2 minutes. Then add remaining 1/2 cup of milk mixture and beat for about 1 minute.
5. Pour batter evenly between two prepared cake pans.
6. Bake until toothpick inserted in the center comes out clean, about 30 to 40 minutes.
7. Allow the cake to cool. Then ice with your favorite icing.
