Vegan Coconut Macaroons

This recipe is so easy and very tasty! I love coconut! Dip these in dark chocolate or drizzle them. Or just eat them plain. Either way they are delicious!

It's a like an almond joy (but with out the almonds) Well, actually you can add the almonds if you like. Be creative!

Vegan Coconut Macaroons

Ingredients

2 cups shredded coconut

3/4 cup vegan sweetened condensed coconut milk (see recipe below)

2 tbsp all purpose flour

1 tsp vanilla exctract

Directions:

1. In a bowl, mix all the ingredients together until full combined.

2. With a spoon or ice cream scoop, spoon desired amount on to a parchment

paper lined baking pan.

3. Bake at 350F, for 15-20 minutes or until golden brown edges.

Vegan Sweetened Condensed coconut milk

1 can 14 oz coconut milk

1/2 cup raw sugar

Directions:

1. In a saucepan, mix the two ingredients together and start boiling the mixture for about 5 minutes or until it thickens and bubbles.

2. Strain the condensed milk and use it in your coconut macaroons. Or for any other baking goods!
