Vegan English Toffee

I love candy, especially during the holiday season! But, homemade candy is the best! It's even great as gifts or stocking stuffers!

This recipe is super easy and taste wonderful, like what your grandma use to make for the special occasions. It brings back good old memories of my mother making Christmas candies for the whole family to enjoy and shipping more candy to family across the united states! Try this recipe out!

Vegan English Toffee

Ingredients

1/2 cup vegan butter

1 3/4 cup raw sugar

1/8 tsp cream of tartar

1 cup coconut cream (1 can)

1 tsp rum extract

1/4 tsp vanilla extract

1 cup dark chocolate vegan chips

1 cup toasted chopped nuts

Directions:

1. Preheat your oven for 350F. Toast your chopped nut ( I used pecans) for about 10 mintues or until evenly toasted.

2. Grease another parchment lined baking sheet. Set aside.

In a large heavy saucepan, combine the sugar and cream of tartar; stir in the cream and butter. Cook and stir over medium to high heat until a candy thermometer reads 300F (Hard crack stage).

3. Remove from the heat and stir in the extracts. Quickly pour on to your grease baking sheet. Let it set up in room temperature until cool to the touch.

4. In a microwave safe bowl, melt your chocolate chips until smooth. Spread across the top of your toffee and sprinkle your toasted mixed nuts. Put the sheet in the fridge for about 10- 15 minutes to set up the chocolate. Then take it out of the fridge and break in to pieces. Enjoy!

Store in a plastic container at room temperature. Don't put in the fridge, otherwise it will melt your toffee. Humidity and sugar don't mix. Just a little tip. :)
