Vegan Popcorn "Shrimp"


If you ever miss eating shrimp. You got to try this recipe out! It's amazing how you can take veggies and turn them in to the flavors of things you use to eat and it's so much better for you. Your body will love you for it! No oil used in this recipe! It's healthy and it taste great!

Vegan Popcorn "Shrimp"

Ingredients

1 recipe of seafood marinade

1 block extra firm tofu (14 oz)

2 cups bread crumbs or panko

1/4 cup unsweetened shredded coconut (optional)

1 tbsp nutritional yeast

1/4 tsp garlic salt or to taste

black pepper to taste

4 egg substitute mix (I use Bob's egg replacer)

Directions:

Preheat oven to 400F

1. Make the seafood marinade and set aside.

2. Take your tofu out of the package and pat dry your tofu on both sides. Then cut the tofu in 3 equal parts. About 1/2" thick. See below.

3. Use a paring knife, cut out shrimp shapes or use a shrimp cookie cutters. Place the "shrimp" in the seafood marinade. Let it marinate for about 1-4 hours.

4. In a bowl, add the remaining ingredients (bread crumbs, shredded coconut (if using), nutritional yeast, garlic salt, and black pepper to taste.)

In another bowl, mix together the 4 "eggs" accordingly to the package. However, I add a little more water to be easier to dip the "shrimp." Set both bowls aside.

5. Take the "shrimp" out of the marinate and place them on a greased foil lined baking sheet and bake for 10-15 minutes on each side. Let them cool down. The reason you are going to bake them twice is to dry out the tofu to get that shrimp texture.

6. So now dip the "shrimp" in the "egg" batter and then coat them with the bread crumbs. Place them back on a greased foil lined baking sheet. And set the oven to broil setting, on high heat. Broil the "shrimp" for 5-10 minutes on each side until golden brown.

Serve with vegan tartar sauce or just plain! Enjoy!
