Vegan Dark Chocolate Peppermint Mousse

Christmas is almost here and still looking for that perfect dessert to serve? Here it is! This recipe is simple and delicious! It reminds me of the chocolate mint candies! But with no cream! Be amazed by this dessert! Your non-vegan friends will never know the difference!
Vegan Dark Chocolate Peppermint Mousse
Ingredients
1 cup aquafaba (chickpea juice from a can)
1/4 cup agave
1 1/2 cup dark vegan chocolate, melted
4 tbsp non dairy milk
1/4 tsp peppermint extract
1 pinch sea salt
Directions:
1. In a mixing bowl with a whisk attachment, whip the aquafaba, agave, and sea salt until stiff peaks form. Set aside.
2. Melt your chocolate with the non dairy milk in the microwave in 20 second intervals or in a hot water bath (bain marie). Stir frequently so it doesn't burn.
Then fold the chocolate in with the aquafaba. It will deflate a little bit. Don't worry! Put your mixing bowl back on your mixer machine.
Get a shallow bowl of ice and place the bowl of ice under your mixing bowl. Make sure the ice is touching the bottom of your bowl. This will help cool down your chocolate. Whip your mousse on high speed until it starts to thicken and looks like mousse! This will take about 5 minutes or so.
**If you don't want to use a ice bath. You can always put your mousse in the fridge or freezer for about 20-30 minutes and then re-whip your mousse until it thickens.

Pour the mousse in your favorite dessert dishes or use it as a filling for a cake. Chill. Serve your dessert with some crushed peppermint candy canes! Enjoy!
