Cauliflower "Cheese" Sauce

I never thought cauliflower would be such a great base for a cheese sauce! I know it makes a really good Alfredo sauce, but who knew it's great as a cheddar sauce! You can cook it on the stove and use it as a spread, or use it for grilled cheese sandwiches, dips, queso, nachos and more! To add it to make mac-a-cheese you can just add a little more nondairy milk to thin it out. But the possibilities or endless! Plus, its whole lot healthier too! No oil and no nuts for anyone with nut allergies! Try this recipe out!
Cauliflower "Cheese" Sauce
Ingredients
1 cup raw cauliflower
1/2 cup sauerkraut
3/4 cup nutritional yeast
1 tsp onion powder
1 tsp garlic powder
1 tsp ground mustard
1 tsp sea salt or to taste (I added 1/4 tsp more)
4 tbsp tapioca flour
juice from half of a lemon
1/2 cup unsweetened coconut milk
1/2 tsp liquid smoke

Directions:
1. Place all the ingredients in a blender and blend until completely smooth.
2. To thicken it, place the cheese in a saucepan, heat it on medium to low heat and stir occasionally. Cook until it thickens and it stretches.

Cool it down and use it for grilled cheese or dips, etc. If you want to add it to a pasta like ma-a-cheese, just thin it out with some non dairy milk and you will get the perfect sauce!
