Cauliflower Mayonnaise


If you're looking for a super healthy mayonnaise, well this is it! It's really tasty! Plus, it has absolutely no oil, no dairy, and no eggs! Super low in fat, like maybe 1.12 grams of fat in the whole recipe! It's great in sandwiches, wraps, and anywhere else you use mayo for! Try this healthy recipe out and let me know what you think!

Cauliflower Mayonnaise

Ingredients

1 cup cauliflower, raw

1/4 cup unsweetened coconut milk (unflavored)

1 tbsp nutritional yeast

1/2 tsp sea salt

1/2 tsp lemon juice, fresh

2 tsp apple cider vinegar

1 tsp xanthan gum

Directions:

1. Place all the ingredients in a blender or food processor and blend until completely smooth. I usually have to blend it twice and scrape down the sides in between blending.

Enjoy it on you next sandwich!
