Veggie Wrap


Here is a really good healthy and simple lunch idea! A veggie wrap with mixed veggies and cauliflower mayo! Low in fat with no oil!

Full of great flavor and you can add as much of veggies as you want or as much your tortilla will let you. Get creative! Add some red wine vinegar or a cauliflower ranch!

Veggie Wrap

Ingredients

sliced Roma tomatoes

sliced cucumbers

sliced pepperoncini peppers

Spinach

shredded carrots

half of a avocado

white or red onions

green onions

1 tortilla (or maybe 2)

black pepper, to taste

garlic salt, to taste

Directions:

1. There are no right or wrong amount of veggies to a wrap. It all depends how much you want to add. (Hence, there's no measurements for the veggies)

2. On a tortilla, spread a thin layer of the cauliflower mayo and add all your veggies that you want! Sprinkle some fresh pepper, garlic salt, or a little drizzle of red wine vinegar.

Eat this for lunch with some hummus or fruit!
