Vegan All in One Protein Bars

Looking for a quick breakfast or a snack for your week? This protein bar is really tasty and easy to make. Make a huge batch and freeze them for a rainy day. Take them with you on a walk or hike in the mountains. Great for those afternoon snacks at work or for whenever!If the recipe too big for you, you can cut in half.

All in One Protein Bars

Makes approx. 18 bars

Ingredients

4 cups rolled oats

2 tsp poppy seeds

2 tbsp toasted sesame seeds

1/2 tsp sea salt

1 tsp ground cinnamon

1 cup toasted walnuts, finely chopped

2 cups toasted almonds, sliced

1 cup almond meal or almond flour

7 cups dates, pitted

3/4 cup water

zest from 1 orange

Directions:

Preheat oven to 350F

1. In a bowl, toss all the ingredients together; except the dates and water.

2. In a food processor or blender, blend the dates and the 3/4 cup of water, until it looks like a thick paste. You may have to processes in 2 batches.

3. Add the dates to the oat mix and mix until it forms a dough consistency.

4. Grease a half sheet pan or a 9" x 13" pan

5. Press the nut dough in to the pan evenly.

6. Place the bars in the oven and bake for 10-20 minutes. Chill and flip the pan over on a cutting board. With a sharp chefs knife cut the bars about 1" by 6" inch long. Drizzle with vegan dark chocolate and sprinkle toasted sesame seeds.
