Vegan Coconut Island Bars

Do you like coconut and lime? Well you will love these protein bars! They taste like you just got off the boat for the Bahamas. You got to try this really delicious protein bar. Dairy free, egg free, gluten free and free of all animal by product! So healthy, eat it for your next snack.
Vegan Coconut Island Protein Bars
Ingredients
Makes approx. 18 bars
2 cups rolled oats
4 cups shredded coconut, toasted
1 tbsp poppy seeds
2 tbsp toasted sesame seeds
1/4 tsp ground ginger
1/2 tsp sea salt
2 cups toasted almonds, sliced
1 cup almond meal or almond flour
6 cups black or golden raisins
3/4 cup water
zest from half of a lime
1 tsp coconut extract
Directions:
Preheat oven at 350F
1. In a bowl, toss all the ingredients together; except the raisins and the water.
2. In a food processor or blender, blend the raisins with the water; until it looks like a paste. You may have to process in 2 batches.
3. Add the raisins to the coconut mix and mix until it forms a dough consistency.
4. Grease a half sheet pan or a 9" by 13" inch pan. Press the nut dough in to the pan evenly.
5. Place the pan in the oven and bake for 10-20 minutes. Chill and flip the pan over on top of a cutting board. Cut the bars with a sharp chefs knife, approximately 1" by 6" inch long. Drizzle vegan white chocolate and chopped dried fruit. Or just eat them plain!
