Mexican Chick Pea Soup

Need something spicy in your life? Try this Mexican style soup! Loaded with flavor and with a nice kick! Eat it with some fresh bread or tortilla chips! Its cream and tasty without any dairy and meat!
Mexican Chick Pea Soup
Ingredients
1/2 cup onions, chopped
2 carrots, sliced
2 celery sticks, chopped
1 tbsp vegetable base + 1/4 cup water
1 cup chick peas + 1/2 cup
4 tbsp nutritional yeast
1/4 cup hummus
1 tsp smoked chipotle
1 tsp chili powder
1 tsp onion powder
2 1/2 cups water
1/2 of lime juice
1/2 cup cooked brown rice
2 tbsp chopped cilantro
2 sprigs of green onions
Sea salt to taste
Directions:
1. In a medium to large pot, saute your onions, carrots, celery, 1 cup chick peas, veggie base, and the 1/4 cup water.
Cook until the veggies start to soften. Stir occasionally.
2. Add the 2 1/2 cups of water, hummus, and all the seasonings. Stir until its combined. On medium to high heat, let it cook until it starts to boil. Continue to boil for about 2-5 minutes.
3. Stir in the lime juice, cooked brown rice, 1/2 cup chick peas, cilantro, and the green onions. Plus, salt to taste. Cook for about a minute more and it should be ready to eat!
4. Add some tortilla chips on top and enjoy a tasty fiesta treat!
