Vegan "Cheese" Queso


Got a craving for nachos, nacho fries, or a tasty dip? Got to try this oil free, tofu free, nut free queso vegan "cheese"! So creamy and it has a great flavor with a little kick. Use it on your next nachos or burritos or whatever! Low in fat or almost no fat and taste really good!

Get creative with this "cheese" sauce!

Vegan "Cheese" Queso

Ingredients

1 cup raw cauliflower

1/2 cup sauerkraut

1 cup nutritional yeast

1 tsp onion powder

1 tsp garlic powder

1/2 tsp chili powder

1/2 tsp smoke chipotle

1/4 tsp smoke paprika

1 tsp ground mustard

1 tsp sea salt or to taste (I added 1/4 tsp more)

2 tbsp tapioca flour

juice from 1 whole lemon

1/2 cup unsweetened coconut milk

1 tsp liquid smoke

1/4 cup pickled jalapeno juice

1/4 cup chopped onions

Directions:

1. Place all the ingredients in a blender and blend until completely smooth.

2. To thicken it, place the cheese in a saucepan, heat it on medium to low heat and stir occasionally. Cook until it thickens and it stretches. To thin it out just add water or non dairy milk of choice. Enjoy!

Use it as a dip or just added it to you Mexican vegan meals!
