Oatmeal Pizza Crust

Here's a great pizza crust with a nice crunch and a great natural flavor. I wanted to have pizza with not much gluten in it. Or if you didn't want any gluten, you can substitute the small amount of flour with a gluten free flour blend. Anyways, I like creating different pizza crust for more of a rustic flavor with my veggies. It gives it a nice earthy flavor. This crust is more dense than a normal pizza crust. But its great for those thin crust pizza nights with a nice crunch to it.
Oatmeal Pizza Crust
Ingredients
2 cups oat flour
1 cup All purpose flour
1 cup warm water
1 tsp dry active yeast
1 tsp coarse sea salt
2 tsp olive oil
2 tbsp sauerkraut water
Preheat Oven to 400F
Directions:
1. In a bowl, add your warm water and yeast together. Whisk until yeast is dissolved.
2. Place 1 cup oat flour in to the water and mix until just combined. Add the remaining ingredients.
3. Mix until it forms a dough. Take the dough out of the bowl and knead with a lightly flour surface for about a minute.
4. In another mixing bowl, lightly grease the bowl with a olive oil, place the dough in it and let it sit for about 1 hour.
5. Lightly sprinkle your baking stone (or a parchment baking sheet) with cornmeal. Place the dough on top of the stone and roll it out with a rolling pin until the size of your pan. About 1/4" to 1/2" thick or by preference.
6. Lightly spread your sauce on top and the rest of your veggies. I used a vegan mozzarella cheese. Recipe will be coming soon!
7. Bake for 25 to 30 minutes or until lightly toasted on top.

Cool down for about 5 minutes and cut in to pieces. Enjoy!
