Keto Meatloaf!


I grew up on eating meatloaf. I had two working parents and my mom would make fast and easy meals to make when she came home. And one of them that we had alot of the time was meatloaf. I know some people grew up hating meatloaf. But if it's flavored right, it was really tasty!

Anyways, I created this recipe with a little kick and full of flavor. Plus, super low in carbs. Probably, 1 gram a carb per serving! Try this one out!

Keto Meatloaf

Approx. 1 gram of carb per serving

Ingredients

1 lb. ground grass fed beef (or vegan veggie ground meat)

1/2 white diced onions

1/4 of a green bell pepper, diced

1/2 cup pork rind crumbs (or vegan bread crumbs)

2 eggs (or vegan egg subsitute)

2 tbsp low sugar ketchup

2 cloves minced garlic

1 cup shredded cheddar cheese (I used white) (or vegan cheese)

1 tbsp Franks Red hot sauce

1 tsp sea salt

1/2 tsp black peppercorn

1 tsp smoked paprika

1 tsp chili powder

1 tsp red pepper crushed, optional

Topping:

1/2 cup shredded cheddar cheese (or vegan cheese)

1/4 cup feta cheese crumbles

Directions:

Preheat oven to 375F

Grease a loaf pan with olive oil

1. In a large mixing bowl, mix all the above ingredients (except cheese for the top) until full combined.

2. Grease your pan with some olive oil and place the meat mixture in to the pan. Evenly spread it with your spatula. Top the meatloaf with the 2 cheeses evenly across the top.

3. Place the meatloaf in the oven and bake for 45 - 50 minutes. Let it rest for about 5-10 minutes. Cut it in to slices and serve!

This was so good! I had seconds!! This goes well with some roasted veggies or a nice green salad. Enjoy!
