Keto Cinnamon Rolls

Do you miss the smell of freshly baked cinnamon roll? Or the soft, chewy, and gooey creaminess of a hot cinnamon roll? You definitely need to check out this recipe! You won't even know it's low in carbs. It only has about 4 grams of net carbs! You would think it was a total lie! This is so good either right out of the oven or for the next morning! Not too sweet and just the right amount of cinnamon flavor. The cream cheese icing just tops it off. You would want to eat the whole darn thing!

Keto Cinnamon Rolls

Makes 8-9 cinnamon rolls

4 grams of net carb each roll

Ingredients

3/4 cup vital wheat gluten

2 1/4 cup almond flour

1/2 cup warm water

1 tsp dry active yeast

4 oz unsalted butter, melted

2 eggs

1/2 tsp sea salt

1 tsp baking powder

1/4 cup monkfruit sugar

5 drops stevia extract

2 oz unsalted butter, soften (for the filling)

Directions:

Preheat oven 375F

Grease a round 9" - 10" cake pan

1. In a mixing bowl, mixing together the warm water and the yeast until its dissolved.

2. Whisk in the eggs, 4 oz melted butter, monkfruit sugar, and the stevia extract.

3. Fold in with a spatula the almond flour, vital wheat gluten, baking powder and the salt until it forms a dough.

4. Let the dough rest in the bowl for about 10 minutes.

5. Take the dough out and place it on a sheet of parchment paper. Take another piece of parchment paper and place it on top of the dough. Take your rolling pin and roll out your dough in to a rectangle to about 1/4" to 1/2" thick.

6. Gently spread the 2 oz of the soften butter on the dough.

7. In the meanwhile, make the cinnamon filling (see below) and sprinkle the cinnamon/sugar evenly on top of the butter. Not too heavy. (**You will not use all the cinnamon/sugar; save the remainder for another batch)

Filling:

1/2 cup golden monkfruit sugar

2 tsp ground cinnamon

15 drops stevia extract

Directions:

1. In a small bowl, place the monkfruit sugar with the cinnamon and the stevia drops until fully combined. Set aside.

8. With the help of using the parchment paper, start rolling the dough by the longest end. Cut the dough with a sharp knife about 2" long. Or however, size you want your rolls.

9. Place them in a greased baking pan. Let the dough rest for 20 minutes.

10. Bake the cinnamon rolls in the oven for 30 to 35 minutes or until lightly golden brown on top. Make the cream cheese icing below. Spread the cream cheese icing on top of the cinnamon rolls and serve hot or room temperature.

Cream cheese icing

Ingredients

8 oz cream cheese, soften

1/2 cup powdered monkfruit sugar

2 oz unsalted butter, soften

1 1/2 tsp vanilla extract

5-10 drops stevia extract

Directions:

1. In a mixing bowl or a mixing machine bowl, cream the cream cheese and the butter together.

2. Mix in the powdered monkfruit sugar, stevia, and the vanilla. Blend until fluffy and smooth.

They were so delicious, I had 2 in one sitting!! But hey, I worked out earlier. Plus, they are only 4 grams net carb each roll!! It doesn't matter!!
