Keto Homemade Pasta Noodles & they turn into Curly Fries!!

Updated: Oct 30, 2019

I love Italian food. So much flavor and loaded with cheese! I wanted to create a low carb noodle that would be healthy and tasty at the same time. This recipe is great and super simple. Total of 3 net carbs per serving! Yup, that's all! Toss some Alfredo or pesto sauce you're in business!! Plus, there's a extra bonus with this recipe that I accidentally ran in to. If you bake the noodles a little longer you have curly fries! That's right, I said it, you can have keto French Fries!! And yes, they taste like shoe string curly fries!

Keto Pasta Noodles

Serves about 4

3 Net carbs per serving

Ingredients

1 cup steamed cauliflower

1/2 cup almond flour

4 eggs

1/2 tsp salt

1 tsp onion powder

1/2 tsp garlic powder

2 tbsp psyllium husk

1/4 cup water

Directions:

Preheat oven 350F

1. Place all the ingredients in a blender. Blend until its smooth.

2. On a sheet of parchment paper, spread the batter out to a 1/8" thick. Place the sheet on a baking sheet.

3. Place the sheet in to the oven and bake for 10-12 minutes or until they are just baked. You don't want much color on them.

4. Take it out of the oven and cut in to strips (about 1/2" in width) with a knife or a pastry cutter.

Use right away in to your favorite sauce!

Now for the fries...

1. Once you have cut the noodles in to strips, toss them in avocado oil and gently place them back on parchment baking pan evenly.

2. Continue to bake for another 5-10 minutes or until desired crispiness. Enjoy with your favorite dipping sauce!!

Enjoy with your favorite dipping sauce or have it with your next burger!!
