Nothing like homemade candies! Looking for a alternative to regular white sugar for your candies, like brittle? Look no further, my friend!
This candy is made out of coconut sugar and maple syrup! It came out really delicious! Just dip it in some dark chocolate and you have yourself a great little treat!
You can use mixed nuts or any kind of nut you like. I just love almonds. However, the secret of a good brittle, is toasting your nuts! (I'm talk about food, by the way, lol)
It enhances the flavors to any candy really! So don't forget to put them in the oven!
This brittle, is dairy free, gluten free, and grain free! Make a big batch and have some in a candy dish this holiday season!

Almond Brittle

Ready 1 hour
Serves 12
Ingredients
2 cups coconut sugar
1/2 cup water
1/2 cup coconut oil, "butter flavor"
1/3 cup pure maple syrup or raw honey
1/2 tsp baking soda
1 1/2 cups toasted whole almonds
2 pinches sea salt
1 tsp vanilla extract
Preparation:
Preheat oven 350F | 1 parchment lined baking pan | 1 greased parchment lined baking sheet
On a parchment lined baking sheet pan, evenly add your almonds. Bake for 15-20 minutes or until lightly toasted. Set aside.
In a large pot, add the coconut sugar, water, maple syrup, and coconut oil. Stir until the coconut sugar is completely absorbed by the water. Clean the side of pot, if there's any granules on the side.
Cook on medium to high heat, make sure you put a candy thermometer inserted in the sugar. Don't stir. Let it cook until it reaches 300F (hard crack) on the candy thermometer.
Turn off the heat once it reaches temp. Be CAREFUL, stir in the baking soda, vanilla, and the toasted almonds.
Pour the candy on a greased parchment baking sheet pan. With your spatula, flatten the candy as even as you can. Let it cool down and harden.
Break apart and dip pieces in dark chocolate or eat as is. Enjoy!

Tips:
You can play with the flavors, you can add some cinnamon or cayenne pepper for a little kick. Or you can dip it in chocolate of choice.
Store the candy in a plastic bag or container, separated with wax paper or parchment paper.
