Best Chocolate Chip Cookie Recipe! No Gluten, Dairy, Nuts, & Grain - Paleo Style

I've tried many attempts to make this as close to the real thing. I must say this is pretty darn close. It has a nice crispy edge and a soft and chewy inside. It's everything you want a healthier cookie to be.
You can convert it to a vegan cookie, if you substitute the yolks with a vegan egg replacement.
The flour that I used for this cookie is called cassava flour. Its a vegetable root that comes from the underground part of the cassava shrub. Like potatoes and yams. Cassava roots have a similar shape to sweet potatoes. Compared to potatoes, yuca root (or cassava root) is higher in calories, protein, and carbs. This makes it ideal for athletes and active individuals.
I started making these for my family and they don't last very long! You must try this one out for yourself and have a cup of coffee or tea with it! I hope you enjoy these cookies as much as I do! :)

Best Chocolate Chip Cookie
Gluten free - Dairy Free - Nut Free - Grain Free - Paleo friendly
Yield: 16 cookies
Ready in 30 minutes
Ingredients
½ cup coconut butter flavored oil
½ cup pure maple syrup
1 cup coconut sugar
4 yolks or vegan egg replacements
2 tsp vanilla extract
½ tsp baking soda
½ tsp sea salt
1 ½ cup cassava flour
¾ cup chocolate chips or carob chips
Preparation
Preheat the oven at 350F and line a baking pan with parchment paper.
In a mixing bowl, blend together the coconut oil, maple syrup, coconut sugar until fully combined.
Stir in the egg yolks (or vegan egg replacement) and vanilla.
Then blend in all the dry ingredients (except the chips). Lastly, add the chocolate chips or carob chips.
With a cookie scoop or spoon, scoop out the dough and place on the baking sheet. Space them about 2-3 inches apart. Gently press the tops of the cookie.
Bake the cookies for 12- 14 minutes. Let them cool completely before you remove them from the sheet pan.

Tips
You can add a ½ cup of toasted chopped pecans to make them even tastier!
