Caramel Apple Toasted Pecan Cinnamon Rolls

Don't you just love them smell of fresh cinnamon rolls? I know, I do! But wouldn't it be great to have it filled with sweet apples and tossed in cinnamon and then glazed with a gooey caramel?


Well look no further, I have a treat in store for you! You got to try this cinnamon roll recipe out for the holidays! Or any time of the year! They make your home smell like sweet cinnamon apple heaven!


It's also healthier than what you get at the store! It's dairy free, gluten free, grain free, and paleo friendly!




Caramel Apple Toasted Pecan

Cinnamon Rolls

Dairy Free | Gluten Free | Grain Free | Paleo friendly


Ready in 1 1/2 hrs

Serves 8 cinnamon rolls



Ingredients

3 cups plantain flour

1 ¼ cups tapioca flour

1 ⅔ cups water

3 tbsp avocado oil

½ tsp sea salt

¾ cup coconut sugar

2 yolks

2 tsp baking powder


Filling:

2 medium apples (gala or honey crisp), diced ½” cubes

1 ½ cups coconut sugar

1 tbsp ground cinnamon

5 tbsp coconut oil “butter flavor”


Caramel Icing:

1 cup coconut sugar

2 tbsp pure maple syrup

½ cup water

2 tbsp coconut oil “butter flavor” or ghee

2 tbsp coconut milk

1 tsp vanilla extract


½ cup toasted pecan pieces



Preparation

Preheat 350F Grease a 9x13” baking pan


  1. For the Dough: In a mixing bowl, mix together the water, yolks, and avocado oil until well blended.

  2. Stir in the dry ingredients. Blend until it forms a dough. Knead for about a minute until well blended. Set aside.


  1. Make the apple filling: Peel, core, and dice your apples in ½” inch cubes. Place the apples in a mixing bowl, and toss in the 1 ½ cup coconut sugar and cinnamon until coated. Set aside.

  2. Go ahead and toast ½ cup of pecan pieces for 6 minutes or until lightly toasted. Set aside.


Assembly:

  1. With 2 pieces of parchment paper, sandwich the dough between the 2 papers. Roll out the dough into a rectangle.

  2. Smear the coconut oil (5 tbsp) on the rectangle dough evenly. Then evenly sprinkle the apple cinnamon sugar mix on top of the oil.

  3. Roll up the dough with the filling. Starting on the long side of the rectangle. Then cut it into 2”-3” slices.

  4. Place it in a greased baking pan (spray baking spray or rub coconut oil into the pan) It makes about 7-8 cinnamon rolls.

  5. Bake for 30-40 minutes. Glaze. Serve warm!


For the icing:

  1. In a medium size pot, pour your water and then pour in the sugar. Make sure the granules don’t hit the side of your pot. If so, just wipe it down.

  2. Then add the maple syrup. With a candy thermometer, cook the sugar on medium to high heat, until it reaches 265F (hard ball stage).

  3. Take it off the heat and add the coconut oil, coconut milk, and the vanilla. Be careful when adding the vanilla it will bubble a little due to having alcohol in it.

  4. Let it cool down and drizzle over your cinnamon rolls and sprinkle the toasted pecans on top! Enjoy!



Tip:

If you want to replace the apples, you can with some pears and dried cranberries or what ever fruits you wish! Enjoy this with a cup of coffee or tea!


Plus, you can freeze these in a plastic container and refresh them in the oven for 20-30 minutes.
