Chicken Lo Mein - Gluten Free & Soy Free

I missed eating Chinese food. But I didn't want the soy sauce or the added preservatives in it.

I created this dish with only coconut aminos and natural ingredients.


Its a easy dish and full of flavor! I customized it a little bit than your traditional lo mein. But hey, I think its delicious! I love the mixed veggies in it.

Chicken lo Mein

Gluten Free - Soy Free - Nut Free - Grain Free


Ready in 30 minutes

Serves 4-5


Ingredients


1 1/2 cup shredded chicken, cooked

2 garlic cloves, minced

2 tbsp Sesame seed oil

1 tsp garlic salt

1 cup chopped Napa cabbage

1/2 cup diced white onions

1/2 cup chopped carrots

1/2 cup sliced celery

1/2 cup frozen peas (optional)

1/2 cup coconut amino

2 tbsp coconut sugar

2 tsp garlic chili paste

1 - 8 oz package cassava spaghetti noodles


Preparation


  1. In a large skillet, saute on medium heat, the sesame seed oil with the minced garlic, onions, carrots, peas, celery, and cabbage. Cook until it the carrots start to become slightly tender. Stir in the garlic salt and the cooked chicken. Turn down the heat to low.

  2. In the mean while, make the cassava noodles. Follow the directions on the package. Its quite simple, you make them just like regular noodles. Drain and toss the noodles in the veggie mix.

  3. In a small bowl, combine the coconut amino, coconut sugar, and garlic chili paste together. Pour over the veggies and noodles. Toss the noodles and veggies until they are coated with the sauce. You can add some sliced green onions on top. Enjoy!




Tips:


If you're curious, where to get coconut aminos you can get them at your local store or amazon. It's quite inexpensive. I think it just depends on where you go.



It's crazy how coconut amino taste like regular soy sauce. I honestly think it taste better!

Also if you wanted, you can add the mung bean sprouts too! I just didn't have any at the time. But it would add another texture and flavor to the dish!
