Chocolate Creme Pie | Dairy Free & Gluten Free

Its officially pie season! It's not the holidays without a chocolate creme pie! I love the lightly sweetened coconut whip cream on top the dark creamy chocolate pudding!


This has a wonderful chocolate gluten free crust made out of plantain flour. You got to try this pie out and surprise your family with it! You can add a chocolate drizzle on top for added flavor!


This is not only gluten free and dairy free, but nut free, grain free, and egg free!




Chocolate Creme Pie

Preparation time: 1 1/2 hr.

Ready in 24 hrs.

Serves 8



Ingredients


Crust:

add 2 tbsp dutch cocoa powder


Filling:

2 cans coconut cream 13.6 oz

1 cup dark chocolate chips

1 cup coconut sugar

¼ tsp sea salt

¼ cup arrowroot powder

2 tsp vanilla extract


Topping:

1 recipe Chantilly



Preparation


Crust:

  1. Make a batch of the gluten free pie crust and follow the directions on how to make the dough. Plus, add 2 tbsp dutch processed cocoa powder when you are mixing in the flour.

  2. Blind bake (with no filling) with pie weights. I line the pie shell with parchment and fill with raw rice. This prevents the crust from slumping and bubbling up.

  3. Set oven as 350F. Bake for 10 minutes and then remove the weights and bake for 10 minutes more. Set aside.

Filling:

  1. In a medium pot, add the coconut cream and reserve 1/2 cup. Set aside.

  2. Take the 1/2 cup coconut cream and whisk together the 1/4 cup arrowroot, mix until completely dissolved. Add to the coconut cream in the pot.

  3. Turn the heat on medium. Stir in the coconut sugar and sea salt until combined with the coconut milk. Keep stirring until it starts to thicken and bubble.

  4. Turn off the heat and add the chocolate and vanilla. Stir until chocolate is completely melted.

  5. Pour the chocolate pudding in the pie shell. Place a piece of plastic wrap and lay it on top of the chocolate pudding. This will prevent a skin to form. Chill overnight.

Topping:

  1. Make 1 recipe of the Chantilly cream (non dairy whip cream). Follow the directions on how to make it. Once the chocolate pudding is completely cold, place your finished Chantilly cream on top of the pie and decorate with cocoa powder and chocolate chips!

Tip:

You can brush on some melted dark chocolate on the base of the crust before you put the pie filling in. This would give more a chocolate flavor with a crunch.
