Christmas is just around the corner, do you have a Christmas salad in mind? If not, try this yummy and healthy kale salad flavored with fresh orange juice and dried cranberries. With a melody of vegetables added to this delicious green salad. Topped with roasted sunflower seeds or toasted almonds.
It's chalk full of vitamins and minerals. And dressed with a creamy orange dressing. You definitely want to try this refreshing salad out!
It's also dairy free, gluten free, nut free, grain free, and paleo friendly! This would make a great addition to your holiday meal!

Christmas Kale Salad

Ready in 30 minutes
Serves 6
Ingredients
8 cups chopped fresh kale
1 cup white onion, diced
1 cup carrots, shredded
1 cup Napa cabbage, shredded
1 cup red cabbage, shredded
1 cup dried cranberries
1/2 cup toasted & salted sunflower seeds or toasted almonds
Dressing:
1 1/4 cups mayonnaise (12 oz jar)
juice from 1 orange
1 tsp orange zest
5 tbsp pure maple syrup
1 1/2 tsp garlic salt (Lawry's) + 1/4 tsp
1/2 tsp onion powder
1/2 tsp black pepper
Preparation:
In a large mixing bowl, toss together the chopped kale, diced onions, shredded carrots, shredded cabbage, shredded red cabbage, and dried cranberries.
To make the sauce - In a medium bowl, whisk together the mayo, orange juice, orange zest, maple syrup, garlic salt, onion powder, and black pepper. Mix until fully combined.
Toss the salad dressing in with the kale salad until veggies are completely coated. Top with the sunflower seeds or almonds. Enjoy!

Storage:
This salad is only great the day of your meal. You could probably make it 6 hours ahead. Otherwise, the kale starts to look sad. I have made it a day before and then toss some more fresh kale in with it to refresh it. Enjoy!
