Christmas Sugar Cookies | Gluten free & Nut free

It's Christmas time and everyone knows there's going to be Christmas cookies given out during the holiday parties. If you know someone who has food allergies and want to share the joy of giving cookies, try this cookie out!


It has no dairy, no gluten free, no grain, and no nuts! Naturally sweetened with pure maple syrup! It's glazed with food natural dyes! It has a great flavor with a soft chew texture!





Christmas Sugar Cookies

Gluten free | Dairy free | Nut free | Grain Free | paleo friendly


Ready in 30 minutes

Makes 18 cookies


Ingredients

1 cup coconut oil

1 cup pure maple syrup

2 egg yolk or vegan egg substitute

1 cup plantain flour

1 cup arrowroot flour

¾ cup tapioca flour

½ tsp baking soda

¼ tsp sea salt

2 tsp vanilla extract



Preparation:

Preheat oven 350F | parchment lined baking sheet

  1. In a mixing bowl, blend together the coconut oil, maple syrup, vanilla, and the egg yolks.

  2. Stir in all the dry ingredients (plantain flour, arrowroot flour, tapioca flour, baking soda, and sea salt. Blend until forms a soft dough.

  3. On the parchment sheet pan, scoop out the cookie dough with a spoon or ice cream scoop. Gently press the tops.

  4. Bake for 12-14 minutes. Let it cool down before removing from the sheet pan. Then glaze your cookie or eat just plain!


Dairy free Sugar Cookie Icing


Ingredients

1/2 cup unmodified potato starch

3 tbsp pure maple syrup

1 pinch sea salt

1/2 tsp vanilla extract

1 tbsp water

Natural dyes (you can find here)


Preparation:


  1. In a small bowl, combine all the ingredients above together and whisk until completely smooth. Add the your favorite color to your icing and drizzle on top of the cookies!




Storage tip:


You can store these in a plastic container or zip lock bags and place in the freezer up to 2 months. Enjoy!
