Cinnamon & Sugar Donuts | Gluten Free & Dairy Free

Do you like donuts? Before I changed my diet, I loved eating donuts! I use to buy or make a dozen for my birthday and eat it throughout the week. Well, my husband would help me eat them too...


But there's nothing like having a moist, soft, and fluffy donuts with a nice sugar glaze.

This donut is whole lot healthier than your typical donuts. It's gluten free, dairy free, grain free, and low in carbs! Great for watching your carbs intake. It only has 7.6g net carbs without any glaze or sugar coating. With a sugar coating it has about 11.6g net carbs per donut.

Makes 1 dozen donuts

Ingredients

1 cup coconut milk (canned), warm

2 tsp dry active yeast

1/2 tsp baking soda

1/4 cup avocado oil

1 egg

1 tsp natural butter flavor (optional)

1/2 tsp sea salt

1 cup almond flour

1/4 cup tapioca flour

3/4 cup coconut flour

1 tbsp golden flaxmeal

1 tsp xanthan gum



Preparation:

Preheat oven to 350F | Grease 2 donut pans


  1. In a mixing bowl, whisk together the warm coconut milk and yeast until the yeast is dissolved.

  2. Whisk in the oil, sweetener, and egg. Stir in the almond flour, tapioca flour, coconut flour, flaxmeal, xanthan gum, baking soda, and salt. Mix until it has thicken and its completely mixed.

  3. Spoon or fill a piping bag with the batter and fill the donut pans with the batter.

  4. Cover with a piece of plastic wrap and let it rise for 30-40 minutes.

  5. Take the plastic wrap off and bake in the oven for 18-20 minutes.

  6. Let them cool down completely before removing them from the pan. You are letting the donuts set up more as they cool.

  7. Once you take them out of the pans, toss them in a cinnamon sugar mixture. Mix 1 cup Bocha Sweet sweetener with 1-2 tsp cinnamon. Toss or sprinkle the donut in the mixture and enjoy!




Storage:

You can have them covered on the counter for 3-4 days. You can freeze them for up to a month in a food safe container.
