Creamy Butternut Squash Soup



We are well in to the soup season. You might want to add this recipe to your collection for those cold winter nights. It would be great with a large salad or some grilled chicken. This recipe is easy and full of flavor! With low carbs and full of vitamins to boost your immune system during the flu season. Try this recipe out tonight!






Creamy Butternut Squash Soup

Yields: 2-3 servings

10 to 15 grams net carbs per serving (depends how big your portion)



Ingredients


1 medium butternut squash, steamed cubed

4 tbsp unsalted butter

1/2 large white onion, diced

2 minced garlic, cloves


1 can 13.5 oz coconut milk

1 cup heavy cream

1 1/2 tsp sea salt (+ 1/4 tsp)

2 tbsp peanut butter powder

1/2 tsp black pepper


Directions:


1. In a medium pot, saute the onion and garlic with the butter until its tender.

2. Add the steamed cubed butternut squash. Pour in the coconut milk, cream, salt, peanut butter powder.

3. With a hand blender or regular blender blend the soup until its smooth. Add the black pepper.





It's that simple and tasty! Great for when you're sick or just want to keep warm.
