Dairy Free Banana Pudding

I must say I just love bananas! They have such a sweet wonderful flavor and they are a classic fruit for any desserts! This dairy free banana pudding would be great in a banana cream pie or used for a donut filling or a cake filling!
This is not only just dairy free, but it's gluten free, egg free, and soy free. A real simple and quick recipe to make. Go ahead and add some fresh sliced bananas on top and enjoy this little delight after a meal.

Serves 4
Ingredients
1 can 13.5 oz full fat coconut milk
1 can 13.6 oz coconut cream
⅔ cup raw honey
¼ tsp sea salt
4-6 tbsp arrowroot powder (preference on how thick)*
2 tbsp coconut oil “butter flavor”
1 tbsp organic banana extract + 1 tsp
Preparation
In a large pot, whisk together the coconut milk, coconut cream, honey, salt, and the coconut oil.
In a small bowl, add the arrow root and take ¼ cup of the coconut milk from the pot and whisk the milk with the arrowroot until it’s completely dissolved. Then pour the mixture into the pot of coconut milk.
On medium heat, whisk occasionally. But cook the pudding until it thickens and bubbles. Then add the banana extract.
Pour it into a high heat resistant container and chill the pudding overnight. It will thicken as it cools. Enjoy with fresh banana slices!
** If you want it more like a pudding for a bowl, use 4 tbsp of arrowroot. If you are using in a pie, use 6 tbsp of arrowroot. This would be thicker for a pie form.

This pudding would be a perfect filling for pies, cakes, pastries, or donuts. Also, you could use this for trifles as well. Or just eat it as it is with some ice cream!
