Dairy Free Cheese Ball Dip

During the holidays, my mom would always make a cheese ball dip made out of cream cheese, shredded cheddar cheese, onion and ham. It was always creamy and delicious!
I carried that same tradition in to my home for many years. However, due to the changes in my diet, I couldn't make this wonderful dip anymore.
Until now! I finally made a replica of this delicious dip! But it has no dairy, no gluten, and no grains in this dip. You could have it nut free, if you don't want to put the toasted almonds on the outside of the cheese ball.
I'm officially addicted to this dip! I just use cassava chips and then just dip! You can use whatever gluten free crackers that you enjoy!

Dairy Free Cheese Ball Dip

Serves 8
Ingredients
1 recipe dairy free white cheddar cheese
2 sprigs green onions, sliced
1/4 cup white onion, finely chopped
1/2 cup deli ham, sliced in to thin cubes (no nitrates)
2 tbsp avocado mayonnaise
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp smoked paprika
5-6 drops hot sauce (optional)
1 cup toasted crushed almonds or mixed nuts
Preparation:
Preheat oven 350F
Make a batch of the dairy free white cheddar cheese. This takes 24 hours to set up in the fridge. You may want to make this the night before you actually need the dip.
In the meanwhile, place the cup of almonds on a baking sheet pan and bake for 8 minutes or until nuts are toasted. Set aside and let it cool completely.
In a mixing bowl, place the cheese in the bowl and stir in the all the dried spices, mayo, sliced green onions, finely chopped white onion, sliced deli ham, and the hot sauce (optional).
Once your almonds are cooled down, coarsely chop them or ground them in a blender. Evenly, place the nuts on a piece of parchment paper and scoop out the cheese dip on to the middle of the nuts and sprinkle the nuts all over the dip until covered. Place it on a plate and chill. It will be ready for the party!

Tip:
Make sure you always toast you almonds or mixed nuts. They bring out the best in the nut, it's just the best way to explain it. They have so much more flavor than if you don't toast them. Plus, you really don't have to add any nuts to the outside of your cheese ball, you can just enjoy the dip as is.
