Dairy Free Cream Cheese

I've tried different ways to make a non dairy creamy spread or cheese. But I do have to say this is one of my favorites! It has great flavor and it reminds me a lot of the real thing. Plus, without the gums and preservatives.
It's made out of coconut cream and oil! Which is a great fat for your body to absorb. I think this would make a great base for a cold dip! I have many ideas for this yummy non dairy cream cheese.
It's not only dairy free, it nut free, soy free, grain free, and gluten free!

Dairy Free Cream Cheese
Gluten Free | Soy Free | Nut Free | Grain Free | Paleo friendly
Yields: 1 cup
Ready 20 minutes
Ingredients
1 cup coconut cream
2 tbsp virgin coconut oil
2 tbsp avocado mayo ( I use Sir Kensington’s)(or for vegan - Just mayo)
2 tbsp sauerkraut juice
½ - 1 tsp sea salt
4 tbsp nutritional yeast
1 ½ tsp gelatin powder (for vegan use agar agar)
¼ cup cold water
Preparation
In a food processor or with a hand blender, blend together all the above ingredients except the water and gelatin. Set aside.
***The salt will be your preference. That's why there’s a range between ½ tsp to 1 tsp. Try it with a smaller amount and then add more if you wish.
In a small bowl, pour the cold water and then sprinkle the gelatin on top until it dissolves in the water. This is called blooming your gelatin. Let it sit for 5 minutes.
Then in a small pot, add the bloom gelatin and melt it down on medium to low heat. Heat until it's completely melted and it’s hot to the touch. Be careful!
While the blender is on, slowly pour the melted gelatin in with the coconut mix until completely combined. Pour in a storage container and chill overnight.

Tips:
For a savory cream cheese you can add some fresh herbs and chives. Or whatever your heart desires! Create different flavors by adding your favorite ingredients!
