Dairy Free Creamy Pumpkin Pasta

Its finally pumpkin season and I just can't get enough of this yummy squash! Hopefully you feel the same! But I promise you this is a delicious creamy pumpkin flavored pasta that you would want at your holiday dinner.
It's not only dairy free, but its gluten free, grain free, nut free, and soy free. It's great for people who are vegan, paleo, or allergic to dairy. You can add some veggies and chicken to make it a main dish. Hope you enjoy this dish as much as I do!

Dairy Free Creamy Pumpkin Pasta
Dairy Free | Gluten Free | Grain Free | Nut Free | Paleo friendly & Vegan
Yields: 4 servings
Ready in 20 minutes
Ingredients
1 cup pumpkin puree
1 cup coconut milk (full fat)
2 garlic cloves, minced
1 ½ tsp garlic salt
5 tbsp nutritional yeast
1 tbsp sauerkraut juice
1 tsp granulated dried onion
2 tbsp avocado mayonnaise or Just mayo (vegan brand)
Salt to taste
1 pkg elbow gluten free or cassava noodles
Preparation
In a medium size pot, start to boil your water for the pasta. Follow the directions on the package of the pasta.
In the meanwhile, in a skillet on medium heat, add the pumpkin, coconut milk, minced garlic, garlic salt, nutritional yeast, sauerkraut juice, dried onion, and the mayo. Whisk together until it's fully combined.
Once you heat up the sauce, turn it down to low heat and let it simmer for 5- 10 minutes or until it thickens to desired thickness.
Once your pasta is done boiling, drain and add the pasta to the sauce and stir until the noodles are coated with the sauce. Enjoy!

You can add some veggies like yellow squash, onions, or zucchini. And then add some sliced chicken. This would make a great main course meal for those fall nights!

If you're wondering what kind of gluten free pasta I use. I buy the cassava pasta. It's not only gluten free, its also grain free and nut free. They sell different kinds of pasta from spaghetti to penne pasta. It's the closest thing that taste/texture like the real thing.
