Dairy Free Creamy Queso

I've been having a lot of tacos lately! Been missing something creamy and cheesy in them. I came up with this hot dip and added it to my tacos, burritos, and much other Mexican style dishes!


Its got a great creaminess and full of flavor! Plus, it has a little kick to it! Which I like a little spice in my dips! But if you don't like it, no worries just take it out!


Its not only dairy free, its soy free, and gluten free!


Don't be intimated about the long list of ingredients, trust me its well worth it! Its really easy, just some chopping involved.


It's great for appetizers and for family gatherings. Try this yummy dip out!





Dairy Free Queso

Gluten Free | Vegan | Paleo friendly | Soy Free


Ready in 20 minutes

Serves 4



Ingredients

1 can 13.6 oz coconut cream

4 tbsp tapioca powder

2 tbsp arrowroot powder

1/2 cup nutritional yeast + 1 tbsp

2 minced garlic cloves

1/2 cup salsa Verde

1 tsp Jalapeno, finely chopped

1/2 cup white onion, diced

1/2 red bell pepper, diced

2 tbsp sauerkraut juice

juice from half of a lime

1 tsp dried granulated onion

2 tsp garlic salt + 1/2 tsp

1/2 tsp smoked paprika

1 tsp chili powder



Preparation:


1. First, you want to dice your onions, bell pepper, jalapeno (optional), and mince the garlic. Place them in a bowl.

2. In a medium size pot, add the coconut cream. Reserve 1/4 cup.

3. In small bowl, add the 1/4 cup of cream and whisk in the tapioca flour and arrowroot powder until its dissolved. Pour it back in the pot of cream.

4. Start whisking in the nutritional yeast, salsa verde, all of the veggies, garlic, sauerkraut juice, lime juice, and all of the spices. Whisk until well blended.

5. Cook the pot on medium heat and whisk occasionally. Keep cooking until it starts thicken and bubbly. Enjoy with some tortilla chips or eat it with your tacos!
