Dairy Free & Soy Free Ricotta Cheese

This was really good!! I made this and added it to my lasagna and it came out great! I highly recommend this to any Italian pasta dish! Add it to your manicotti or have it with your stuffed shell pasta.


It's not only dairy free, its soy free, nut free, and gluten free! And it's completely healthy!




Dairy Free & Soy Free Ricotta Cheese

Vegan | Gluten Free | Nut Free | Grain Free


Ready in 30 minutes

Makes about 2 cups



Ingredients


2 cups cauliflower

½ cup coconut milk

4 tbsp nutritional yeast

1 tbsp sauerkraut juice

1 tsp sea salt

1 clove minced garlic

1 tbsp arrowroot powder



Preparation

  1. Chop up your cauliflower into small florets. In a double boiler, steam the cauliflower until it's almost tender. You want the inside somewhat firm.

  2. In a mixing bowl, add the cauliflower and use a fork or a potato masher. Lightly mash, but not like mash potatoes. You want some structure to it. Consistency of cauliflower rice. Set aside.

  3. In a small pot, whisk together the rest of the ingredients until combined. Cook on medium heat until it starts to thicken.

  4. Add the sauce to the cauliflower and mix until combined. Ready for lasagna!




I used a potato masher to get the cauliflower to that rice texture. You could probably use a food processor and use the pulse button, if you don't have a masher.
