Dairy Free White Cheddar Cheese

I love cheese, I mean who doesn't? But I have chosen for my health sake to give it up. I originally wanted to make a mozzarella but I accidentally ended up making a white cheddar cheese!


This is so creamy and tasty! I can just eat it with a tortilla chip or use it to put on your toasted bagel!


It's not only dairy free, it's also gluten free, nut free, and grain free! It can be vegan if you replace regular gelatin with agar agar vegan gelatin.




Dairy Free White Cheddar Cheese

Ready in 24 hrs.

Serves 8



Ingredients

1 can coconut cream 13.5 oz (or regular coconut milk)

¼ cup nutrition yeast

1 tsp sea salt + ¼ tsp

2 tsp apple cider vinegar

2 tsp potato starch

¼ cup tapioca flour


2 tsp gelatin

¼ cup water, cold



Preparation

  1. In a small mixing bowl, add the ¼ cup of cold water and then sprinkle the gelatin on top until it’s dissolved. This is called blooming your gelatin. Let that sit up. Set aside.

  2. Meanwhile, in a medium pot, whisk all the above ingredients and blend until the tapioca and potato starch is dissolved in the coconut cream.

  3. On medium heat, you will cook the sauce until it thickens. Whisk continually. Keep cooking until its about to break. (when you start to see the oil just about to separate from the sauce)

  4. Turn off the heat, and whisk in the gelatin and mix until it’s completely dissolved.

  5. You can pour this in silicone molds or use a round glass container but coat it with some cooking oil and line it with plastic wrap. So this way it will come out of the container easier.

  6. Chill the cheese in the fridge for 24 hrs. Invert it onto a plate and take the plastic off. You have a piece of yummy cheese!




Tips:

You can play with the flavors on this one. You can add fresh herbs or other flavors to create it to your taste. Plus, you can freeze this and shred it with a cheese grater!
