Dirty Snowballs - Homemade Christmas Candies



Don't you just love homemade candies for the holidays! I love making them and of course eating them as well!! Here's a yummy little treat to make for the kids or great little gifts for family and friends!


This is an easy recipe and quick to make! Filled with coconut and naturally sweetened with pure maple syrup, plus flavored with peppermint extract. However, if you want to flavor it with vanilla or almond instead that would be really good too!


These little candies are dairy free, gluten free, grain free, vegan, and paleo friendly!

Ready in 30 minutes

Makes 14 candies



Ingredients

2 cups unsweetened shredded (desiccated) coconut

1/2 cup pure maple syrup

2 pinches sea salt

4 tbsp coconut oil

2 tsp peppermint extract


Glaze:

2 cups dark chocolate chips

2 tbsp coconut oil

1/2 cup whole almonds



Preparation:

Preheat oven 350F | 2 parchment lined baking sheet pan

  1. In a mixing bowl, mix together the coconut, salt, and the coconut oil. Blend until the coconut oil is completely mixed with the coconut. Then mix in the maple syrup and peppermint extract until it forms a thick paste.

  2. Take a small cookie scoop and scoop out 14 round balls. Then place them on a parchment lined baking sheet pan. Place the pan in the freezer for 10 minutes until they are firm.

  3. Meanwhile, in a small pot add the dark chocolate chips and coconut oil. Melt the 2 ingredients on low heat until completely melted and smooth. Turn the heat off. Set aside.

  4. Place the 1/2 cup whole almonds on one of the baking pans and bake the almonds for 8-10 minutes or until desire darkness. Let them cool down.

  5. Finely chop the almonds and add 3 heaping tablespoon to the melted chocolate. Mix until completely combined.

  6. Start dipping your snowballs in the chocolate and use a fork to lift them out. This way the chocolate can run through the fork and not make a puddle to your candies.

  7. Place it back on your parchment baking pan and sprinkle some coconut shavings on top. Chill in the fridge for 10 minutes and enjoy!




Storage:

You can store these either in the freezer or the fridge. Like any other candy, they will last a long time if they are kept cold. About 1-2 months in the freezer or 2 weeks in the fridge. (if they last that long! lol)
