Easy Homemade Fudge | Dairy Free & Gluten Free

Homemade candies are so much fun to make and great to share with the family!


Christmas isn't the same without some homemade candies like fudge! I remember as a child, every Christmas party at my grandparents house they always had homemade fudge! I just loved them!


However, this recipe is a little bit healthier sweetened with coconut sugar and not so dangerously rich as regular fudge. But you're probably going want to eat more than one piece!





Easy Homemade Fudge

Dairy Free | Gluten Free | Grain Free | Nut Free | Paleo-friendly | Vegan



Ready in 40 minutes

Serves about 3 dozen



Ingredients

4 1/2 cups dark chocolate chips (dairy free)

4 tbsp coconut oil

1 cup coconut milk

1 cup coconut sugar

1 pinch sea salt

2 tsp vanilla


**Other flavors instead of vanilla:

2 tsp peppermint extract

2 tsp instant espresso granules

1 1/2 tsp almond extract



Preparations:

Parchment Lined 8" x 8" square pan


  1. In a medium pot on low heat, melt together the chocolate and coconut oil together. Mix until well blended and smooth. Set aside. **don't let it sit in one spot as you heat up the chocolate, it will burn. You need to constantly be stirring.

  2. In another small pot, add the coconut milk and sugar. Cook on medium heat. Let it boil for 5 minutes or until it thickens like syrup. Stir in the pinch of salt.

  3. Fold in the coconut mixture with the chocolate. Add the vanilla extract. Mix until its fully combined and pour in to the parchment lined 8" x 8" baking square pan. Level it with your spatula and chill it in the freezer for 20-30 minutes or until its completely hard to the touch.

  4. Take it out of the freezer and lift the fudge out with the parchment paper. Place it on a cutting board and cut in to cubes.




Tips:

You can add 1/4 cup toasted pecan pieces or crushed almonds. Or any toasted nut you prefer.
