Gluten Free Banana Bread

Nothing like the smell of banana bread baking in the oven. I just love how it fills the entire house with the sweet aroma of banana and cinnamon.


Here's a great banana bread recipe that is easy to make and taste wonderful. Plus, it's healthier than your traditional banana bread. It's gluten free, dairy free, grain free, and nut free!


Just slice it up and add your coconut butter or ghee! Enjoy this with your family and friends!




Gluten Free Banana Bread

Dairy Free | Grain Free | Nut Free


Ready in 1 hr 20 minutes

Makes 1 loaf



Ingredients

1 1/2 cups coconut sugar

2 cups mashed bananas (about 4-5 bananas)

4 yolks

1/2 cup coconut oil, melted

2/3 cup coconut milk

2 1/2 cups plantain flour

1 1/2 tsp baking soda

1/4 tsp sea salt

1/2 tsp ground cinnamon



Preparations:

Preheat oven 350F | Grease a loaf baking pan


  1. In a mixing bowl, mash the bananas with a fork or potato masher. Whisk in the coconut sugar, yolks, and melted coconut oil. Mix until combined.

  2. In another mixing bowl combine the plantain flour, baking soda, sea salt, and ground cinnamon.

  3. Alternately add the flour mix and the coconut milk in with the banana mix until its all combined.

  4. Pour the batter in to the loaf pan and bake for 60-70 minutes or until tooth pick comes out. Let it cool down and then remove from pan and cut in to slices.
