Gluten Free | Lactose Free | Colitis & Crohn's Sensitive Crustless Pumpkin Pie

My husband loves pumpkin pie. However, due to his health it prevents him from enjoying this tasty pie. So I decided to come up with this gluten free, lactose free, and colitis/Crohn's friendly crustless pie. By using unfiltered raw honey, it's a anti-fungal and it good for the people who have gut issues. Super easy and very convenient since you can bake them in individual ramekins. No mess from cutting in to slices. I guess you can call them more like a pumpkin custard but it still taste like your favorite pumpkin pie.





Crustless Pumpkin Pie

Yields: 4 ramekins


Ingredients


1 1/2 cup pumpkin puree

3/4 cup raw unfiltered honey

1/2 tsp sea salt

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground cloves

1/4 cup arrow root

1 cup water



Directions:


Preheat oven 350F

4 ramekins



1. In a mixing bowl, whisk together the dry ingredients together. (salt, all the spices, and arrow root)

2. Then whisk in the pumpkin, honey, and the water until smooth.


3. Pour the filling in to ramekins and bake for 30 - 35 minutes until the filling is just set.



4. Let it cool on the counter for 30 minutes then chill in the fridge overnight for flavors to mellow.
