Gluten Free Minestrone Soup

Looking for a really good fall soup! This is it and it's tasty! It's full of veggies and I add a organic kielbasa sausage that just adds the right amount of flavor. This is a great Italian hearty soup for those cold fall nights.


My husband doesn't care for tomato base soups (except plain tomato soup) which is fine with me. I get the whole soup for the next 3 days to myself! I love this time of the year when the leaves fall and it starts getting cold, because its soup and stew making time!


I like to add a little bit of non dairy cheese shreds on top and its great with a big salad on the side. I hope you enjoy this soup as much as I do!




Gluten Free Minestrone Soup

No diary - No grain -


Yields: 3 servings

Ready in 40 minutes


Ingredients


1 cup sliced kielbasa sausage

2 tbsp avocado oil

4 garlic cloves, minced

½ cup diced white onion

½ cup chopped carrots

1 cup zucchini

1 cup yellow squash

1 cup spinach

1 can tomato sauce

2 tbsp chicken base

1 ½ tsp garlic salt

2 tsp dried thyme

3 cups water

1 tsp hot sauce (optional)(I used tapatio)

¼ cup dried orzo (cassava noodle)



Preparation

  1. In a large pot on medium heat, saute the garlic, kielbasa, onions, carrots, and both squashes with the avocado oil. Saute until the veggies are slightly tender.

  2. Sprinkle 1 tsp garlic salt over the veggies and stir until coated.

  3. Add the tomato sauce, chicken base, hot sauce, ½ tsp garlic salt , thyme, and the water. Mix until completely mixed.

  4. Bring the soup to a low boil. Add the dried orzo pasta. Stir occasionally, so the pasta doesn’t stick to the bottom of your pan. Continue to cook on a low boil until the pasta is tender. Turn to a simmer for 10 minutes.

  5. Stir in the spinach until the spinach is cooked. This will take a few minutes. (if that) The soup is now ready to eat!





Tips:


If you want your soup to be thicker in consistency, just simmer it for another 10 minutes. Also you can add a spicy kielbasa sausage if you want more heat in your soup.


Plus, you can make some gluten free flatbread to dip it in the soup!
