Gluten Free Peanut butter & Chocolate Chip Cookies

Do you miss a good peanut butter cookie? How about one that taste like Reese's Peanut butter cups? I made these little gems the other day and they were a hit!
They have a great peanut butter flavor and with chocolate chips, they are to die for!
They are not only gluten free, but dairy free and grain free! You could probably substitute the egg with a vegan egg replacement.
All you need is a tall glass of milk or non dairy milk and you're set!

Gluten Free Peanut butter & Chocolate Chip Cookies
Dairy Free - Grain Free - Vegan
Yields: 16 cookies
Ready in 30 minutes
Ingredients
½ cup coconut oil butter flavor
1 cup crunchy organic peanut butter
1 ½ cup coconut sugar
4 egg yolks or vegan egg substitute
1 tsp vanilla extract
½ tsp baking soda
½ tsp sea salt
¼ cup cassava flour
¾ cup chocolate chip
Preparation
Preheat oven to 350F
Parchment lined baking sheet pan
In a mixing bowl, cream together the coconut oil and coconut sugar until incorporated.
Stir in the egg yolk, vanilla extract, baking soda, and sea salt. Mix until just combined.
Fold in the peanut butter and the cassava flour until it's just combined. Don’t over mix. The fat from the peanut butter starts to separate.
Fold in the chocolate chips. By using a cookie scoop or spoon, scoop out the cookie dough onto the baking sheet. Space them about 2” or 3” apart.
Bake them for 15-18 minutes. Let them cool on the baking sheet before removing them. Enjoy!


I highly recommend buying organic peanut butter because peanuts were grown on a farm that limits the use of pesticides, especially synthetic pesticides or fertilizers.
Whatever you buy, buy organic if you can. You will benefit from eating foods that were grown free from conventional pesticides or fertilizers that will harm your body.
