Gluten Free Pumpkin Oatmeal Cereal Mix

Its starting look like fall outside. The leaves are starting to turn color and fall to the ground. The temperature is starting to drop. Which I'm looking forward to some cooler weather. And Pumpkin season is nearly around the corner. Here is a great fall cereal to have in the morning, when you don't feel like cooking a big breakfast. It makes a great snack as well. Super easy and quick recipe! No process sugar added, just naturally sweetened with raw honey. Plus, its gluten free too!
Pumpkin Oatmeal Cereal Mix
Yields: 2 - 32 oz mason jars
Ingredients
2 cups old fashion oats
1 cup shredded coconut, unsweetened
2 cups almond flour
1 cup pumpkin puree
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp sea salt
1/2 cup dried cranberries
1 cup unfiltered raw honey
Directions:
Preheat oven at 350F
parchment line baking sheet pan
In a mixing bowl, add all the dried ingredients together.
Then add the pumpkin and honey. Toss together until its all combined.
Evenly, spread the mix out on to the baking sheet. Bake it for 25 minutes and then flip the cereal over with a spatula and continue to bake the other side for 25 minutes longer. Bake until reaches a nice golden brown color. Let it cool down and enjoy your cereal!
