Gluten Free | Sugar Free Christmas Molasses Cookies


If you love ginger and molasses, then you'll love these cookies. They make the whole kitchen and house smell like Christmas. I just love these cookies. You can have them with a cup of coffee or just eat them by themselves. Easy recipe and simple to make! Only 4.6 grams Net carbs per cookie!





Gluten Free | Sugar Free Christmas Molasses Cookies

Yields: 16 cookies

4.6 grams Net carbs each cookies



Ingredients


2 tbsp molasses

1/2 cup white monkfruit sugar

1/2 cup golden monkfruit sugar

3/4 cup unsalted butter, melted

1 egg

1/2 cup almond flour

1/2 cup coconut flour

1 1/2 tsp baking soda

1 tsp ground ginger

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp sea salt



Directions:


Preheat oven to 350F

Prepare a parchment lined cookie sheet


1. In a mixing bowl, cream together the melted butter and both sugar with a spatula.

2. Stir in the egg and molasses.

3. Add all the dry ingredients, almond flour, coconut flour, baking soda, ginger, cinnamon, nutmeg, and salt. Stir until just combined.




4. Portion and scoop out the cookies on the baking sheet. Gently press them down before you place them in the oven. Bake for 12-14 minutes or until cookies are just set. Let them cool completely before you take them off the cookie sheet.
