Gluten Free | Sugar Free | Keto friendly Coffee House Scones

Get a sweet tooth in the morning with your tea or coffee? Try this scone out! It's perfectly sweet and it has a nice crumb texture. Make some of my sugar free raspberry jam and mascarpone cream to top it! Only 5 grams Net carbs per scone! Its sugar free and gluten free! Try this easy recipe out for your next morning meal.
Gluten free | Sugar Free Coffee House Scones
Yields: 8 Scones
5 grams net carb per scone
Ingredients
2 cups almond flour
1/2 cup coconut flour
1 tbsp psyllium husk powder
1/2 cup monkfruit sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
4 tbsp unsalted butter, cold
3/4 cup heavy cream
1 tsp apple cider vinegar
1 egg
1 tsp vanilla
1/4 tsp almond extract
Directions:
Preheat oven to 375F
Line your baking sheet pan with parchment
1. In a mixing bowl, combine together the almond flour, coconut flour, husk powder, monkfruit sugar, baking powder, baking soda, and salt until fully blended.

2. Blend in the butter until the butter resembles pea size in the flour.
3. Measure out your cream and add the vinegar and the extracts to it. Let it sit for about 1 minute. You are creating a buttermilk like flavor with the vinegar. Add it to the flour mixture and then the egg.
4. Blend until it forms a dough. Place the dough on your counter and shape in to a disc. About 1" to 2" thick. Divide in to 8 pieces.

5. Place your scones on to your parchment lined baking pan. Space apart about 2" or so.
Bake for 20 -25 minutes or until it golden brown on top.
