Here's a pretty filling breakfast cookie for the mornings when you're on the go. Or if you just need a snack. Try this sugar free, gluten free, and vegan blueberry oatmeal cookies. Easy recipe to put together and your family will enjoy it.
Blueberry Oatmeal Breakfast Cookies
Yields: 1 dozen
Ingredients
2 cups almond flour
1 cup oats
1 cup blueberries, frozen
1 tsp orange zest
1 cup monkfruit granulated sweetener
15 drops monkfruit extract
1 tsp ground cinnamon
1/2 tsp nutmeg
1/4 cup chopped almonds
1 tsp baking powder
1/4 tsp sea salt
1/4 cup arrow root powder
1/2 cup water
1/2 cup avocado oil
Directions:
Preheat oven 350F
Parchment lined baking sheet
1. In a mixing bowl, whisk together almond flour, oats, chopped almonds, monkfruit sweetener, cinnamon, nutmeg, baking powder, sea salt, orange zest and arrow root.

2. Stir in the water, avocado oil, and monkfruit extract. Then add the blueberries last.
3. Scoop cookies on the baking sheet spaced 2" apart. Press the cookies down with your hand. (it will not spread so much like a typical cookie)
4. Bake for 25 minutes. Let it cool before you remove from the pan.
