As we start the New year, it's never too late to have a cookie! Here's a sugar cookie that you can enjoy throughout the year! It's a great cookie base to make different holiday cookie cutouts.
It's a simple and easy recipe to make. It's naturally sweeten with coconut sugar and would make a great treat with some coffee or tea!
It's a healthier version than your traditional sugar cookies, but ones you will enjoy! It only has 6.1g net carbs per cookie and its very tasty with the almond flour that is added.
These cookie are gluten free, dairy free, grain free, and low in carbs! Treat yourself with one of these little gems! And Happy New Year!!!

Sugar Cookies

Ready in 30 minutes
Serves about 36 or more cookies
6.1g net carbs per cookie
Ingredients
1 cup coconut oil
1 cup coconut sugar
2 eggs
2 cups almond flour
1 cup coconut flour
1 tsp baking powder
1/2 tsp sea salt
2 tsp vanilla extract or 1 tsp almond extract
Preparation:
Preheat oven to 350F | Baking sheet pan
In a mixing bowl, cream together the coconut oil and the coconut sugar until it is well blended.
Stir in the eggs and vanilla extract (or almond, if you're using). Mix until the egg is just incorporated.
Add in the almond flour, coconut flour, baking powder, and salt. Mix until it forms a dough.
Take 2 pieces of parchment paper and sandwich a portion of the cookie dough and roll it out to about 1/4" to 1/2" thick. (your preference). Then lift the top paper off. Cut out dough with holiday cookie cutters.
Take out the scrap pieces surrounding your cookie shapes. I used number cookie cutters for the New year! You can use your favorite holiday cutters.
Sprinkle some holiday sprinkles and gently press it in to the dough.
Then slide the paper on to your sheet pan. Bake in the oven for 10 minutes. Cool down and enjoy!
Plus, you can flavor them any way you wish! Add some lemon or orange zest. Another option is try out different extracts!
Storage:
You can keep them in a zip lock bag on the counter up to 4 days or so. They freeze really well too. You can freeze them up to 2 months.
