Healthy Orange Chicken

Here's a healthier version of orange chicken! No frying or msg! It's gluten free, grain free, and nut free! Its easier to digest and full of flavor! Have it with cauliflower rice or gluten free chow mein or lo mein! Great for the whole family to enjoy!

Healthy Orange Chicken

Yields: ~ 1 lb
Serves 4 people
Ready in 60 minutes
Ingredients
Breaded chicken:
1 pound boneless/skinless chicken thighs, cut in to 1” cubes
1 cup gluten free bread crumbs
¼ tsp sea salt
¼ tsp black pepper
2 eggs
2 tbsp water
Gluten free bread crumbs:
1 cup cassava flour
2 tbsp avocado oil
2 eggs
½ tsp sea salt
Sauce:
½ cup orange juice
orange zest from 1 orange
3 tbsp coconut amino
¼ cup rice vinegar
½ cup coconut sugar
2 large garlic cloves, minced
1 tbsp arrowroot, mixed with 1 tbsp water
Salt to taste
Preparation
Preheat oven at 375F | Greased sheet pan
For the Bread crumbs: Combine the bread crumb ingredients together until it looks like crumbs.
Bake 375F for 15 minutes or crispy. Set aside.
For the chicken batter: Cut the chicken in 1” cubes and place in a mixing bowl.
In another bowl, whisk together the eggs, salt, pepper, and the water until combined.
Pour the egg batter over the chicken and toss until completely coated.
Place your bread crumbs in a small bowl, in small batches toss your chicken in the bread crumbs until they are coated.
Place them on a greased baking sheet pan.
Bake for 30 minutes or until the internal temp is 165F.

Sauce: In a small bowl, mix together the 1 tbsp arrowroot with the 1 tbsp water until the powder is dissolved.
In a small pot on medium heat, combine all the ingredients for the sauce. Whisk until fully combined. Keep mixing until it starts to thicken and bubble.
Pour over your chicken and enjoy! Serve over chow mein or fried rice.
