Keto - Air Fried Zucchini Fries


If you want a quick and easy snack. Plus, guilt free! You want to try out these air fried zucchini fries! So simple and addicting too! Make my homemade ranch dressing as the dipping sauce and you're in business! No Carbs! (if you don't include the carbs in the zucchini) The breading is made out pork rinds! You're going to want to try this out if you're missing french fries. This is a great substitute!





Air fried Zucchini

Yeilds: 4 cups



Ingredients


2 medium size zucchini

2 cups pork rind crumbs (not flavored)

sea salt to taste



1 egg

2 tbsp water



Directions:


**If you don't have air fryer, no worries,

you can bake them in the oven at 425F


1. Wash your zucchini's and pat them dry. Cut them in wedges. The size is your preference.

I cut them in long skinny wedges.


2. In a blender or food processor, place 4 cups of pork rinds in the processor and process them until they resemble bread crumbs. 4 cups should be blend in to 2 cups worth of crumbs.


If not, it should be enough for 2 zucchini. Whatever you have left over you can use for another time. Now, most pork rinds have salt on them, so it's not necessary to add more salt. But however, if you feel they don't have enough salt on them you can add some to taste. Pour in to shallow bowl.

Set aside.


3. In a small bowl, whisk together the egg and water until combined.

Now it's time to dip your zucchini in your egg batter and then toss them in to the pork rind crumbs until they are entirely covered. Place them in to your air fryer basket or place them on a baking sheet lined with parchment paper.




4. If you're use a air fryer, set your temperature at 400F and the timer for 10 minutes. Shake them a little for them to turn over and continue to cook for another 5 minutes or until golden brown.

**If you're using the oven, bake them for 20-30 minutes or until them are golden brown. which ever comes first.
