Keto | Creamy Cheddar Broccoli Soup with Ham



Here's a soup for those cold winter nights. You got to try this creamy and cheesy broccoli soup. Loaded with some ham and bacon it's so delicious! You would want a second bowl of this stuff! Keto | Cheddar Broccoli Soup with Ham

Yields: 4 servings

Ingredients


2 cups frozen or raw broccoli

1 cup raw cauliflower

1 small white onion, diced

2 garlic cloves, minced

4 tbsp unsalted butter

1/4 cup cream cheese


1 tsp onion powder

1/2 tsp garlic powder

1/2 tsp black pepper

2 tsp sea salt


3 cups heavy cream

1 cup water

2 cups cheddar cheese

1 cup pepper jack cheese


6 strips cooked bacon, chopped

1 cup cubed cooked ham



Directions:


1. In a large pot on medium heat, melt and cook the butter with the broccoli, cauliflower, onions, and garlic. Once the veggies are starting to get tender add the cream cheese. With a hand blender, pulse the veggies until they are like a paste. ** If you don't have a hand blender, you can use a regular blender and pour it back in to the pot.


2. Add the onion powder, garlic powder, salt, and the black pepper. Mix until coated with the veggies.


3. Pour in the cream, water, and both of the cheeses. Stir until the cheese is completely melted together.


4. Finally, add the your cooked bacon bits and your ham. Bring it to a simmer and enjoy your creamy cheddar broccoli ham soup!
